Professor Frederick Terry Sr.
a/k/a Gingerbread Fred
Gingerbread University was the "brainchild" of Professor Frederick H. Terry Sr. while Chairing the Hospitality Department at Nassau College in Garden City, New York.

Culinary students were assigned to create undecorated gingerbread pieces and offer them to members of the community to decorate...a novel idea at the time. The local media publicized the idea and decorating undecorated gingerbread became quite popular, and soon commercialized by a number of major companies.
After retiring, Professor Terry & his son Rick created Gingerbread University as a place where families could enjoy and create a holiday tradition and group activity. The rest is history!

True to It's roots, Gingerbread University continues to operate from Eastern Long Island (home of Terrys 12th generation roots), providing seasonal joy with It's traditional, Old World Recipe Gingerbread at select venues.

Unknown to many, Professor Terry continues to donate a substantial portion of the "University's " profits to The Smile Train in NYC - to provide cleft palate surgery for "kids that cannot Smile"
